A quick, one-pan dinner packed with bold flavour. Smoky chorizo, fragrant rice, and warming spices come together for an easy, satisfying meal the whole family will love.

  1. Dice chorizo into small pieces.
  2. In a hot pan with a little olive oil, sizzle your onion and chorizo.
  3. Once that has started sizzling, add garlic until onion is softened and sprinkle your mild curried sausage base mixture into the pan and mix it in.
  4. Pour in rice, beef stock powder, water and frozen peas into the pan.
  5. Once your water starts boiling, turn the heat down to low and pop a lid on.
  6. Let cook for 15 mins or until the water has been absorbed.
  7. Add in sliced coriander, zest a lemon and butter, placing them in the pan.
  8. Squeeze a lemon over the pan. With a fork gently fluff up your rice and serve cracking salt and pepper over the top.
