A hearty, budget-friendly soup packed with flavour. Sweet roasted carrots and red lentils blend into a smooth, comforting bowl that’s both nourishing and satisfying.

Easy to make and perfect for batch cooking, it’s a simple way to stretch ingredients without sacrificing flavour. 🥕✨

  1. Cut your carrots into bite size pieces and pop into your air fryer, a little olive oil and a sprinkle of salt and cook for 15 mins 200C.
  2. In a saucepan with a little olive oil, cook your onion until soft. Add garlic, ginger, and red lentils, stir through and Moroccan seasoning.
  3. Stir for a minute and add stock.
  4. Simmer for 20 mins and the lentils are soft.
  5. Add in your roasted carrots. Add the zest and juice of a lemon.
  6. Use your immersion blender to blend until smooth.
  7. Serve with a dollop of Greek yoghurt.
  8. If you have any stale bread, air fry into croutons.
