A quick, fresh classic made simple. Tender chicken is coated in a buttery lemon sauce with capers and wilted spinach for a light, flavour-packed meal.

Easy to make and perfect for when you want something fast that still feels a little elevated. πŸ‹βœ¨

  1. Slice each chicken breast in half lengthways so you have 4 thin pieces.
  2. Season both sides with salt and pepper.
  3. Heat a pan over medium heat and brown the chicken on both sides until golden, then remove from the pan.
  4. Add the butter and lemon juice to the pan and let it melt into a glossy sauce.
  5. Return the chicken to the pan, sprinkle over the capers and scatter in the spinach.
  6. Cook until the spinach wilts.
  7. Once wilted, it’s ready to serve straight away.
