One Tray Turmeric Chicken Drumsticks with Roast Capsicum

An easy one-tray dinner packed with flavour and minimal cleanup. These golden turmeric chicken drumsticks roast alongside sweet capsicum and onion for a simple, satisfying meal.

Serve with warm Lebanese bread to soak up all the juices for a fuss-free dinner that’s full of flavour. 🍗✨

Instructions

  1. Chop a red onion into quarters and slice the capsicums lengthways discarding the core and seeds, placing into a pan.
  2. Place the chicken drumsticks into a bowl.
  3. Sprinkle olive oil, coriander seeds, turmeric and cumin seeds onto the chicken.
  4. Season with salt and pepper.
  5. Place the chicken on top of your vegetables in the pan.
  6. Preheat the oven to 200°C.
  7. Bake for 45-50 minutes until the drumsticks are golden, cooked through.
  8. To serve, add some Greek yogurt to a plate and place chicken on top.
  9. Chop Lebanese bread into triangle slices to mop up the juices and place on the plate, drizzling olive oil on top.
