A quick, comforting dinner made with simple pantry staples. This creamy tomato gnocchi comes together in one pan, with soft gnocchi, a rich tomato sauce, and melty cheese for an easy, flavour-packed meal. Perfect for busy nights when you want something delicious without the fuss. 🍅✨

  1. Heat a skillet on the stovetop on a medium heat with a drizzle of olive oil and a tablespoon of butter.
  2. Finely dice onion.
  3. Sauté the cherry tomatoes and onion until softened and translucent.
  4. Add in the garlic sauteing briefly then pour in the tomato paste, gnocchi, thickened cream and water.
  5. Stir altogether and gently simmer for 5–8 minutes, until gnocchi are cooked through, and the sauce has thickened.
  6. Give it another stir then add in a handful of cheese and basil and remove from the heat.
  7. Stir again.
  8. Serve gnocchi warm with salad on the side.
